  1. Prep and set aside mango: peeled & diced
  2. Prep and set aside fresh chili: sliced & deseeded
  3. Prep and set aside jumbo shrimp: cooked & peeled
  4. Get a clean small bowl
  5. Add finely sliced red onion
  6. Fill with ice water
  7. Let rest - 15 min
  8. Get a clean medium bowl
  9. Add lime juice
  10. Add prepared mango
  11. Add prepared fresh chili
  12. Add salt
  13. Stir until well combined
  14. Drain onions
  15. Transfer onions to medium bowl
  16. Add prepared jumbo shrimp
  17. Stir
  18. Let rest - approx 1 min
  19. Garnish with cilantro
  20. Serve
