Boiled rice can be boring. Braising your rice is the only way to go. This recipe is a simple version, but you can add any spices you like, such as turmeric, cardamom or some toasted saffron. And why not throw in some flaked almonds and sultanas for an authentic touch!

Ingredients

  • Chicken stock icon

    720 ml (about 720 g)
  • Olive oil icon

    3 tbsp (about 40.95 g)

    1 tsp (about 2.15 g)
  • Basmati rice icon
    Basmati rice
    360 g (about 1 ¾ cups)

Step preview

  1. Add olive oil, onion, garlic clove, salt and black pepper to a clean medium cast iron skillet
  2. Fry gently until light golden then reduce heat - approx 3 min
  3. Add basmati rice to the medium cast iron skillet
  4. Fry briefly until coated - approx 1 min
  5. Add chicken stock to the medium cast iron skillet
  6. Cover tightly with foil
  7. Transfer immediately until just cooked - 20 min, 180°C
  8. Serve immediately
