Grilled halloumi is best eaten straight off the barbecue. It's melty and soft inside with a delicious char on the outside. This yogurt-herb marinade adds an even more Mediterranean flavor.

Step preview

  1. Add cumin seeds, coriander seeds and black peppercorns to a clean small bowl
  2. Toast in frying pan until doubled - medium heat
  3. Crush with mortar and pestle
  4. Get a clean medium glass bowl
  5. Transfer spices to medium glass bowl
  6. Add chili flakes, salt, mint, plain yogurt and water to the medium glass bowl
  7. Stir until combined
  8. Add halloumi to the medium glass bowl
  9. Cover with plastic wrap
  10. Chill in fridge
  11. Grill
  12. Grill and turn half way through - 6 min, Combination 2
