My girlfriend is a vegan and I'm not, so cooking together means a little extra effort. The pasta recipe was the first vegan meal we cooked together and we still make it regularly. It helps that it's really good.

Step preview

  1. Add water to a clean large saucepan
  2. Boil
  3. Add sea salt and spaghetti to the pasta
  4. Cook until al dente
  5. Add garlic clove and fresh basil to a clean food processor bowl
  6. Pulse until mixture comes together
  7. Add lemon juice, extra virgin olive oil, avocado and water to the sauce
  8. Process until smooth
  9. Add sea salt and black pepper to the sauce to taste
  10. Drain pasta
  11. Transfer sauce to pasta
  12. Stir until well combined
  13. Top with lemon zest
  14. Garnish with fresh basil
  15. Serve immediately
