This recipe is my go to "healthier" version of banana bread that satisfies sweet tooth cravings whilst minimizing the aftermath.

  • Maple syrup icon
    Maple syrup3 tablespoons
  • Coconut oil icon
    Coconut oil60 mlmelted
  • Ground almonds icon
    Ground almonds370 g
  • Baking powder icon
    Baking powder1 teaspoon
  • Ground cinnamon icon
    Ground cinnamon1 teaspoon
  • Blueberries icon
    Blueberries150 g
  • Coconut oil icon
    Coconut oilas needed
    Method

  • 1. Pre-heat oven - 170°C
  • 2. Add banana to a clean large mixing bowl
  • 3. Mash
  • 4. Add egg, vanilla extract, maple syrup and coconut oil to the large mixing bowl
  • 5. Mix
  • 6. Add ground almonds, baking powder and ground cinnamon to a clean medium bowl
  • 7. Mix
  • 8. Transfer content of medium bowl to large mixing bowl
  • 9. Fold blueberries into the large mixing bowl
  • 10. Grease a clean loaf pan with coconut oil
  • 11. Transfer content of large mixing bowl to loaf pan
  • 12. Bake until golden brown - 55 min, 170°C
  • 13. Let cool - approx 20 min
  • 14. Slice
  • 15. Serve
