This recipe is my go to "healthier" version of banana bread that satisfies sweet tooth cravings whilst minimizing the aftermath.

Step preview

  1. Pre-heat - 170°C
  2. Get a clean large mixing bowl
  3. Add banana
  4. Mash
  5. Add egg
  6. Add vanilla extract
  7. Add maple syrup
  8. Add melted coconut oil
  9. Mix
  10. Get a clean medium bowl
  11. Add ground almonds
  12. Add baking powder
  13. Add ground cinnamon
  14. Mix
  15. Transfer content of medium bowl to large mixing bowl
  16. Fold blueberries
  17. Get a clean loaf pan
  18. Grease with coconut oil
  19. Transfer content of large mixing bowl to loaf pan
  20. Bake until golden brown - 55 min, 170°C
  21. Let cool - approx 20 min
  22. Slice
  23. Serve
