A perfect summer pie, oozing with a tart cherry-red filling and topped with a glossy golden crust. We recommend our Basic Pie Crust for the base, but store-bought pie crust works in a pinch.

Step preview

  1. Get a clean large mixing bowl
  2. Add pitted cherries
  3. Add brown sugar
  4. Let rest - 30 min
  5. Roll out basic pie crust
  6. Line a clean pie dish
  7. Pre-heat - 190°C
  8. Drain filling
  9. Add brown sugar
  10. Add cornstarch
  11. Add ground cinnamon
  12. Add juice of lemon
  13. Mix together until combined
  14. Transfer filling to pie dish
  15. Cover
  16. Trim
  17. Get a clean small bowl
  18. Add egg yolk
  19. Add heavy cream
  20. Whisk briefly until combined
  21. Brush pie
  22. Bake - 10 min, 190°C
  23. Reduce - 170°C
  24. Bake until golden brown - 30 min, 170°C
  25. Let cool
