Ditch the packet ramen and make your own at home. This is a simple, comforting take on a Japanese favourite. The broth is beautifully flavoured and ready in minutes. Make sure you cook the salmon until the skin is crispy. It adds wonderful texture.

  1. Prep and set aside chicken stock: hot
  2. Prep and set aside ginger: peeled & sliced
  3. Prep and set aside fresh chili: sliced
  4. Prep and set aside pak choi: sliced
  5. Prep and set aside water: boiling
  6. Prep and set aside cilantro: coarsely chopped
  7. Get a clean frying pan
  8. Add peanut oil
  9. Heat in frying pan on medium heat
  10. Add salmon filet
  11. Cook in frying pan for approx 5min on medium heat
  12. Turn
  13. Cook in frying pan for approx 1min until heated through
  14. Add prepared chicken stock
  15. Add lime juice
  16. Add fish sauce
  17. Add soy sauce
  18. Add prepared ginger
  19. Boil in frying pan
  20. Simmer in frying pan for approx 4min
  21. Add prepared fresh chili
  22. Add prepared pak choi
  23. Simmer in frying pan for approx 5min on medium heat until tender
  24. Get a clean large saucepan
  25. Add prepared water
  26. Add ramen noodles
  27. Cook for approx 3min until tender
  28. Drain
  29. Transfer noodles to 2 medium bowls
  30. Transfer content of frying pan to 2 medium bowls
  31. Garnish with prepared cilantro
  32. Serve immediately
