    Piquanté peppers50 gdrained, sliced
  • Fresh chives icon

  • Tofu icon
    Tofu125 gfried, crumbled
  • Salt & pepper icon

  • Olive oil icon

  • Lemon juice icon

    Method

  • 1. Heat a clean frying pan frying pan - medium-high heat
  • 2. Add pine nuts and fry carefully until light golden - 2 min
  • 3. Arrange beef tomato in the clean serving plates and season with salt & pepper
  • 4. In a clean large mixing bowl mix together pine nuts, piquanté peppers, fresh chives, fresh parsley and sultans
  • 5. In a clean small bowl mix together olive oil, lemon juice and caster sugar
  • 6. Season with salt & pepper and mix together with chives and peppers
  • 7. Spoon peppers over the tomatoes and top with crumbled tofu
  • 8. Serve
