Everyone loves a tasty loaded baked potato, and sweet potatoes take this family-favourite to a new, more grown-up level. Caramelized onions take time and patience to get right, but the results are worth it.

  1. Prep and set aside onion: sliced
  2. Prep and set aside brie: sliced
  3. Pre-heat - 220°C
  4. Prepare a clean work surface
  5. Add sweet potato
  6. Prick
  7. Cook until soft - 45 min
  8. Get a clean frying pan
  9. Add vegetable oil
  10. Add prepared onion
  11. Add white wine
  12. Add white wine vinegar
  13. Add dried thyme
  14. Add brown sugar
  15. Cook slowly in frying pan until caramelized - approx 30 min, low heat
  16. Transfer potatoes to baking sheet
  17. Slice half
  18. Transfer onions to baking sheet
  19. Top with prepared brie
  20. Sprinkle with dried thyme
  21. Cook until browned - approx 5 min, high heat
  22. Season with salt & pepper
  23. Garnish with fresh parsley
  24. Serve immediately
