A homemade version of a fast food classic. Cajun seasoning or smoked paprika will give this simple chicken dish a spicy kick, and buttermilk makes the chicken moist and the coating crunchy and satisfying. This recipe would make perfect party food, or serve with fries and corn the cob for dinner.

Step preview

  1. Add sunflower oil to a clean saucepan
  2. Heat - 180°C
  3. Add egg white, buttermilk and smoked paprika to a clean small bowl
  4. Beat lightly
  5. Season with salt & pepper to taste
  6. Dip chicken breast into the wet ingredients
  7. Add all purpose flour, salt, dried oregano, paprika, cayenne pepper and black pepper to a clean medium bowl
  8. Transfer wet ingredients to dry ingredients
  9. Transfer dry ingredients to saucepan
  10. Fry until golden brown - 3 min, 180°C
  11. Remove with slotted spoon
  12. Pat dry with paper towels
  13. Add mayonnaise and fresh chives to a clean small bowl
  14. Mix with tablespoon until well combined
  15. Transfer chicken to serving plate
  16. Transfer sauce to serving plate
  17. Serve immediately
