Zesty Roasted Chicken Legs

Zesty limes, fragrant ginger and fresh coriander take plain chicken legs to a new and delicious level. Rub the paste under the skin for maximum flavour. Serve with rice and some simple steamed vegetables for a light and tasty dinner.

Step preview

  1. Add lime to a clean work surface
  2. Grate with Grater and reserve the rest
  3. Transfer content of work surface to medium bowl
  4. Add ginger, cilantro and vegetable oil to the medium bowl
  5. Mix with teaspoon until thickened
  6. Add chicken drumsticks to the work surface
  7. Transfer content of medium bowl to work surface
  8. Rub in bit by bit until covered
  9. Slice
  10. Brush with vegetable oil
  11. Transfer content of work surface to large roasting dish
  12. Cook - 45 min, 220°C
  13. Add water, salt and basmati rice to a clean saucepan
  14. Cook gradually and set aside - 10 min
  15. Transfer rice to 4 serving plates
  16. Transfer chicken to 4 serving plates
  17. Scatter cilantro over the serving plates
  18. Serve with lime
  19. Serve immediately
