    Method

  • 1. In a clean medium bowl mix together ginger, cilantro, vegetable oil and lemon zest
  • 2. Rub marinade all over the chicken drumsticks and make some cuts on the skin
  • 3. Rub drumsticks with olive oil and place in a large roasting dish
  • 4. Bake - 45 min, 220°C / 430°F
  • 5. Add water, salt and basmati rice to a clean saucepan
  • 6. Cook and set aside - 10 min
  • 7. Spoon rice into small bowls first to mould, then turn it onto serving plates
  • 8. Add roasted chicken and squeeze over the roasted lime
  • 9. Top with cilantro and serve with lime wedges
