A spicy one-pot wonder flavored with fresh, sweet Basque-inspired flavours. Seasoned chicken pieces are simmered in a rich white wine and tomato sauce. This warming stew is comfort food in a bowl. Serve with plenty of crusty bread to mop up the sauce.

Step preview

  1. Prep and set aside onion: sliced
  2. Prep and set aside red bell pepper: cored, deseeded & sliced
  3. Prep and set aside green bell pepper: cored, deseeded & sliced
  4. Prep and set aside garlic clove: crushed
  5. Prep and set aside prosciutto: torn
  6. Get a clean medium bowl
  7. Add all purpose flour
  8. Season with salt & pepper
  9. Coat chicken pieces
  10. Get a clean medium cast iron skillet
  11. Add olive oil
  12. Transfer chicken to medium cast iron skillet
  13. Fry each side on high heat until golden brown
  14. Transfer content of medium cast iron skillet to work surface then set aside
  15. Heat on medium heat
  16. Add prepared onion
  17. Add prepared red bell pepper
  18. Add prepared green bell pepper
  19. Fry for approx 5min on medium heat until softened while stirring occasionally
  20. Add prepared garlic clove
  21. Add paprika
  22. Add smoked paprika
  23. Add prepared prosciutto
  24. Fry for approx 2min
  25. Return chicken to medium cast iron skillet
  26. Add marsala
  27. Add white wine
  28. Add water
  29. Add canned chopped tomatoes
  30. Add dried thyme
  31. Season with salt & pepper to taste
  32. Heat until bubbles form and cover
  33. Simmer for approx 30min on low heat
  34. Serve immediately
