Harissa is an aromatic paste that packs a spicy punch. Here it adds fragrant flavour to fried aubergine cubes. Piled into flatbreads with a generous smear of hummus, fresh rocket and coriander makes this a mouth-watering lunch.

Step preview

  1. Add eggplant and harissa to a clean medium bowl
  2. Toss until coated
  3. Add olive oil to a clean frying pan
  4. Heat - medium-high heat
  5. Transfer vegetables to frying pan
  6. Cook until softened - approx 6 min
  7. Warm pita bread the clean serving plates
  8. Spread with hummus
  9. Transfer content of frying pan to 2 bread
  10. Scatter arugula over the bread
  11. Top with cilantro
  12. Serve
