  1. Prep and set aside mint: chopped
  2. Prep and set aside orange: peeled & sliced
  3. Get a clean small bowl
  4. Add prepared mint
  5. Add white wine vinegar
  6. Add olive oil
  7. Add honey
  8. Whisk
  9. Mix in prepared orange
  10. Add salt & pepper then set aside
  11. Get a clean frying pan
  12. Heat on medium-high heat
  13. Add pine nuts
  14. Fry for approx 2min until golden brown while stirring occasionally
  15. Transfer nuts to plate
  16. Heat on high heat
  17. Prepare a clean work surface
  18. Slice halloumi evenly
  19. Grill each side for approx 2min until golden brown
  20. Get a clean large serving bowl
  21. Add watercress
  22. Add baby spinach
  23. Serve
  24. Drizzle dressing with salad
  25. Sprinkle nuts
