Halloumi is a firm, salty cheese that fries, grills or barbecues beautifully without melting. The saltiness is balanced by a herby, citrusy cucumber salad that also adds crunch. This would be delicious a light lunch or al fresco supper.

Step preview

  1. Add cucumber, black olives, fresh parsley, mint, green bell pepper, radish, green onion, olive oil and lemon to a clean large mixing bowl
  2. Season with black pepper
  3. Combine
  4. Add halloumi, lemon and olive oil to a clean medium bowl
  5. Season
  6. Toss
  7. Heat a clean frying pan - medium-high heat
  8. Add bread slices to the frying pan
  9. Toast each side until golden brown then set aside - approx 2 min
  10. Transfer cheese mixture to frying pan
  11. Cook each side until light golden - approx 2 min
  12. Serve
