Step preview

  1. Add butternut squash, parsnip, celeriac, ground cumin, ginger purée and vegetable stock to a clean large saucepan
  2. Boil
  3. Reduce to simmer
  4. Cover until tender - 15 min, medium heat
  5. Blend with stick blender until smooth
  6. Season with salt & pepper
  7. Ladle soup into 4 small bowls
  8. Add crème fraîche to the small bowls
  9. Garnish with fresh parsley
  10. Serve immediately
