Seared tender sirloin and stir-fried broccoli are piled on top of crunchy sourdough in this unusual bruschetta recipe. The fresh and zingy dressing brings everything together. These crunchy little open steak sandwiches would make a fabulous lunch or sensational starter.

Step preview

  1. Add water and salt to a clean saucepan
  2. Heat until boiling
  3. Add broccoli to the saucepan
  4. Cook quickly - approx 2 min
  5. Drain
  6. Pat dry with paper towels
  7. Add steak to a clean work surface
  8. Rub in extra virgin olive oil the meat
  9. Season with salt & pepper
  10. Pre-heat a clean medium cast iron skillet - high heat
  11. Transfer meat to medium cast iron skillet
  12. Sear each side until browned - approx 2 min
  13. Remove and let cool - approx 5 min
  14. Transfer meat to work surface
  15. Slice thinly
  16. Add bread slices to the medium cast iron skillet
  17. Toast then set aside
  18. Add extra virgin olive oil, garlic clove and fresh chili to a clean frying pan
  19. Fry - approx 1 min, high heat
  20. Transfer drained broccoli to the oil mixture
  21. Fry - approx 1 min, high heat
  22. Stir balsamic vinegar into the frying pan then reduce heat
  23. Transfer broccoli to large mixing bowl
  24. Transfer meat to large mixing bowl
  25. Toss with arugula
  26. Assemble by topping each toast piece with some of the steak and broccoli mixture
