    Method

  • 1. Heat butter in a clean frying pan
  • 2. Add smoked bacon and cook until light golden - approx 3 min, high heat
  • 3. Add scallops and pine nuts, cook until light golden - approx 4 min, high heat
  • 4. Stir in fresh parsley and lemon zest
  • 5. Transfer scallops to 4 serving plates
  • 6. Serve with bread slices
