A simple but elegant lunch in just 10 minutes. This recipe requires little effort but the results are spectacular. Lemon and parsley add freshness while pine nuts provide texture. Serve with crusty bread and a chilled glass of white wine.

  1. Heat butter to a clean frying pan
  2. Add smoked bacon to the frying pan
  3. Cook until light golden - approx 3 min, high heat
  4. Add scallops and pine nuts to the frying pan
  5. Cook in frying pan until light golden - approx 4 min, high heat
  6. Stir fresh parsley into the frying pan
  7. Add lemon zest to the frying pan
  8. Transfer content of frying pan to 4 serving plates
  9. Serve with bread slices
  10. Serve immediately
