Method
1. Heat olive oil in a clean frying pan
2. Add sausage, red onion and juniper berries and cook until just cooked - approx 10 min, medium heat
3. Add red wine and beef stock and bring to boil
4. Add salt & pepper
5. Reduce the heat to low
6. In a clean jug mix in cornflour and water
7. Add to the pan and stir until thickened
8. Add water and potato to a clean large saucepan
9. Cook until tender - 8 min
10. Drain and return to the saucepan
11. Mix in double cream and salt & pepper and mash with potato masher
12. Transfer potato mash to medium roasting dish
13. Scatter parmesan cheese over the potatoes
14. Bake until bubbles form - approx 10 min, medium-high heat
15. Transfer potatoes and stew to the serving plates and garnish with fresh parsley
16. Serve immediately
