Sausages get an elegant makeover. This warming sausage and red wine stew would make a wonderfully different dinner party dish, or try it as a midweek treat. The layered potatoes provide all the flavour and creaminess of a gratin in just 20 minutes.

Step preview

  1. Heat olive oil to a clean frying pan
  2. Add sausage, red onion and juniper berries to the frying pan
  3. Cook in frying pan until just cooked - approx 10 min, medium heat
  4. Add red wine and beef stock to the frying pan
  5. Boil in frying pan
  6. Add salt & pepper to the frying pan
  7. Reduce in frying pan to simmer - low heat
  8. Add cornflour and water to a clean jug
  9. Transfer content of jug to frying pan
  10. Stir until thickened
  11. Add water and potato to a clean large saucepan
  12. Cook until tender - 8 min
  13. Drain
  14. Return
  15. Add double cream and salt & pepper to the large saucepan
  16. Transfer content of large saucepan to medium roasting dish
  17. Scatter parmesan cheese over the potatoes
  18. Cook until bubbles form - approx 10 min, medium-high heat
  19. Transfer potatoes to 2 serving plates
  20. Transfer content of frying pan to 2 serving plates
  21. Garnish with fresh parsley
  22. Serve immediately
