A light-as-air meringue, dressed up here with whipped cream, roasted kiwi fruit, and pistachios... use any seasonal fruits! Make in advance for an easy dinner party dessert.
Ingredients
Cornstarch1 teaspoon
Vanilla extract½ teaspoon
White vinegar½ teaspoon
Superfine sugar250 g
Egg white4
Kiwias neededpeeled, chopped
Pistachiosas neededchopped
Whipped creamas needed
Method
1. Pre-heat oven - 150°C
2. Line a clean baking sheet with parchment paper
3. Add cornstarch, vanilla extract and white vinegar to a clean small bowl
4. Whisk in superfine sugar and set aside
5. Add egg whites to a clean large mixing bowl
6. Whisk until stiff peaks form
7. Mix sugar mixture into the egg whites gradually
8. Mix until combined
9. Transfer meringue to baking sheet
10. Bake - 50 min, 150°C
11. Let cool
12. Garnish
