This recipe is quick and easy but impressive. The sauce is spectacularly good. Lime cuts through the rich duck perfectly and honey adds sweetness. If you don't have the arrowroot powder, not to worry, you can omit that step, or use another thickener. Serve the duck with steamed vegetables and drizzle the sauce on top.

Step preview

  1. Prep and set aside lime: finely grated, zest of & juice of
  2. Prep and set aside ginger: peeled & finely chopped
  3. Pre-heat - 200°C
  4. Get a clean frying pan
  5. Heat - medium-high heat
  6. Get a clean cutting board
  7. Score duck breast evenly
  8. Rub salt & pepper generously
  9. Add meat to frying pan skin side down
  10. Cook each side until crispy - approx 3 min
  11. Drain
  12. Transfer content of frying pan to medium roasting dish
  13. Brush with honey
  14. Roast until just cooked - approx 5 min, 200°C
  15. Let rest - approx 3 min
  16. Slice evenly
  17. Cover with foil
  18. Get frying pan
  19. Add white wine
  20. Add prepared lime
  21. Add chicken stock
  22. Add prepared ginger
  23. Add honey
  24. Simmer - approx 5 min
  25. Get a clean small bowl
  26. Add arrowroot powder
  27. Add water
  28. Mix
  29. Transfer content of small bowl to frying pan
  30. Stir continuously
  31. Cook until thickened
  32. Serve
