This recipe is quick and easy but impressive. The sauce is spectacularly good. Lime cuts through the rich duck perfectly and honey adds sweetness. If you don't have the arrowroot powder, not to worry, you can omit that step, or use another thickener. Serve the duck with steamed vegetables and drizzle the sauce on top.

    3 tbsp (about 62g)
  • White wine icon

    150ml (½ cup)
  • Chicken stock icon
    Chicken stock
    100ml (½ cup)
  • Arrowroot powder icon
    Arrowroot powder
    about ½ teaspoon (1g)
  • Water icon

    1 tbsp (about 15ml)

Step preview

  1. Pre-heat - 200°C
  2. Get a clean frying pan
  3. Heat - medium-high heat
  4. Score duck breast a clean cutting board evenly
  5. Rub salt & pepper onto the meat generously
  6. Add meat to frying pan skin side down
  7. Cook each side until crispy - approx 3 min
  8. Drain
  9. Transfer content of frying pan to medium roasting dish
  10. Brush with honey
  11. Roast until just cooked - approx 5 min, 200°C
  12. Let rest - approx 3 min
  13. Slice evenly
  14. Cover with foil
  15. Add white wine, lime, chicken stock, ginger and honey to the frying pan
  16. Simmer - approx 5 min
  17. Add arrowroot powder and water to a clean small bowl
  18. Mix
  19. Transfer content of small bowl to frying pan
  20. Stir continuously
  21. Cook until thickened
  22. Serve
