When the weather turns cold and you’re craving comfort, this warming soup will hit the spot. Smoked paprika and streaky bacon cut through the sweetness and add a savoury note. Try to avoid using the type of pumpkin you carve in favour of a less bland variety.

Step preview

  1. Add pumpkin and extra virgin olive oil to a clean large roasting dish
  2. Stir until covered
  3. Roast - approx 25 min, 200°C
  4. Prepare a clean large saucepan
  5. Add extra virgin olive oil, onion, garlic clove, smoked paprika and salt & pepper to the large saucepan
  6. Cook gently until soft - approx 10 min
  7. Transfer content of large roasting dish to large saucepan
  8. Add chicken stock to the large saucepan
  9. Boil - approx 5 min
  10. Transfer content of large saucepan to food processor bowl
  11. Blend until smooth
  12. Pre-heat broiler - high heat
  13. Add smoked bacon to a clean baking sheet
  14. Grill until crispy
  15. Spoon soup into 4 large serving bowls
  16. Break content of baking sheet into 4 large serving bowls
  17. Serve immediately
