When the weather turns cold and you’re craving comfort, this warming soup will hit the spot. Smoked paprika and streaky bacon cut through the sweetness and add a savoury note. Try to avoid using the type of pumpkin you carve in favour of a less bland variety.

Step preview

  1. Prep and set aside pumpkin: peeled, deseeded & chopped
  2. Prep and set aside onion: sliced
  3. Prep and set aside garlic clove: crushed
  4. Prep and set aside smoked bacon: rind removed
  5. Get a clean large roasting dish
  6. Add prepared pumpkin
  7. Add extra virgin olive oil
  8. Stir until covered
  9. Roast - approx 25 min, 200°C
  10. Prepare a clean large saucepan
  11. Add extra virgin olive oil
  12. Add prepared onion
  13. Add prepared garlic clove
  14. Add smoked paprika
  15. Add salt & pepper
  16. Cook gently until soft - approx 10 min
  17. Transfer content of large roasting dish to large saucepan
  18. Add chicken stock
  19. Boil - approx 5 min
  20. Transfer content of large saucepan to food processor bowl
  21. Blend until smooth
  22. Pre-heat - high heat
  23. Get a clean baking sheet
  24. Add prepared smoked bacon
  25. Grill until crispy
  26. Spoon soup into 4 large serving bowls
  27. Break content of baking sheet 4 large serving bowls
  28. Serve immediately
