This is the ultimate autumn comfort food. Apple and pork is a classic combination, and this quick creamy version combines the flavours you love in just 10 minutes. Crème fraiche helps balance the sweetness, but cream would also work well.

Step preview

  1. Prep and set aside apple: cored & sliced
  2. Prep and set aside fresh sage: chopped
  3. Get a clean saucepan
  4. Add boiling water
  5. Add diced potato
  6. Boil until soft - approx 30 min
  7. Drain
  8. Mash with potato masher until smooth then set aside
  9. Get a clean frying pan
  10. Add olive oil
  11. Add unsalted butter
  12. Heat in frying pan - high heat
  13. Fry cubed - 1 cm pork filet
  14. Cook until golden brown - approx 3 min
  15. Add prepared apple
  16. Add apple juice
  17. Boil in frying pan to simmer
  18. Simmer slowly in frying pan until well combined - approx 5 min
  19. Add crème fraîche
  20. Add prepared fresh sage
  21. Season with salt & pepper to taste
  22. Transfer potatoes to 2 large serving bowls
  23. Transfer pork to 2 large serving bowls
  24. Serve immediately
