    Double cream200 ml

    Method

  • 1. Add lemon zest, fresh thyme, olive oil, garlic clove and black pepper to a clean medium bowl
  • 2. Mix a clean small bowl together until combined
  • 3. Mix in the pork filet then set aside
  • 4. Add water, potato and salt to a clean large saucepan
  • 5. Cook until soft - approx 20 min
  • 6. Drain and mash with potato masher
  • 7. Add double cream, butter and salt & pepper to the potatoes
  • 8. Mash with potato masher again
  • 9. Transfer pork to the pan and cook evenly until golden brown - approx 5 min
  • 10. Remove and let cool for 2 min
  • 11. Transfer mashed potatoes and pork to 4 serving plates
  • 12. Garnish with fresh thyme
  • 13. Serve immediately
