Method
1. Add lemon zest, fresh thyme, olive oil, garlic clove and black pepper to a clean medium bowl
2. Mix a clean small bowl together until combined
3. Mix in the pork filet then set aside
4. Add water, potato and salt to a clean large saucepan
5. Cook until soft - approx 20 min
6. Drain and mash with potato masher
7. Add double cream, butter and salt & pepper to the potatoes
8. Mash with potato masher again
9. Transfer pork to the pan and cook evenly until golden brown - approx 5 min
10. Remove and let cool for 2 min
11. Transfer mashed potatoes and pork to 4 serving plates
12. Garnish with fresh thyme
13. Serve immediately
