Step preview

  1. Add lemon zest, fresh thyme, olive oil, garlic clove and black pepper to a clean small bowl
  2. Mix together until combined
  3. Mix pork filet into the pork then set aside
  4. Add water, potato and salt to a clean large saucepan
  5. Cook until soft - approx 20 min
  6. Drain
  7. Mash with potato masher
  8. Add double cream, butter and salt & pepper to the potatoes
  9. Mash with potato masher
  10. Transfer pork to frying pan
  11. Cook evenly until golden brown - approx 5 min
  12. Remove and let cool - approx 2 min
  13. Transfer pork to 4 serving plates
  14. Transfer potatoes to 4 serving plates
  15. Garnish with fresh thyme
  16. Serve immediately
