This quick take on a popular classic is a real family-favourite. Don’t skip flattening the chicken breasts with a rolling pin. It makes them tender and moist. The versatile tomato sauce would also be delicious with pasta or meatballs. Serve with a green salad or vegetables.

Step preview

  1. Pre-heat broiler - high heat
  2. Prepare a clean work surface with plastic wrap
  3. Place chicken breast on the work surface
  4. Cover with plastic wrap
  5. Flatten until 1 cm thick
  6. Add egg to a clean small bowl
  7. Beat
  8. Mix parmesan cheese and breadcrumbs into a clean small bowl
  9. Dip chicken into egg mixture
  10. Coat chicken with crumbs
  11. Transfer chicken to plate
  12. Place in fridge
  13. Add olive oil to a clean frying pan
  14. Heat - medium-high heat
  15. Add garlic clove to the frying pan
  16. Cook quickly - approx 10 sec
  17. Add tomato purée and caster sugar to the frying pan
  18. Simmer until thickened - approx 7 min, medium-low heat
  19. Add dried oregano to the frying pan
  20. Transfer chicken to baking sheet
  21. Broil each side until light golden - approx 5 min
  22. Get a clean baking dish
  23. Pour sauce into baking dish
  24. Arrange chicken in baking dish
  25. Cover with mozzarella cheese
  26. Sprinkle with parmesan cheese
  27. Broil until melted - 3 min
  28. Serve
