This elegant salmon dish would be as welcome as a midweek meal as it would be at a dinner party. Ready in just 20 minutes, crisp, salty prosciutto adds flavour and helps keep the salmon succulent and moist. Serve with salad or, for a more substantial meal, steamed baby potatoes.

Step preview

  1. Add salmon filet to a clean cutting board
  2. Season with salt & pepper
  3. Scatter fresh parsley over the fish
  4. Wrap with prosciutto tightly
  5. Add olive oil to a clean frying pan
  6. Heat - medium-high heat
  7. Transfer fish to frying pan
  8. Cook each side - approx 4 min, medium-high heat
  9. Transfer content of frying pan to serving plate
  10. Garnish with arugula
  11. Add lemon to the serving plate
  12. Serve immediately
