  7. Add olive oil
  8. Heat - medium-high heat
  9. Add prepared onion
  10. Add prepared chorizo

  12. Cook in frying pan until golden brown while stirring occasionally - approx 6 min
  13. Add prepared tinned green lentils
  14. Add dried thyme
  15. Add prepared chicken stock
  16. Add dijon mustard
  17. Stir
  18. Cook until just boiling - approx 2 min
  19. Season with salt & pepper
  20. Serve
  21. Serve rustic french bread
