Step preview

  1. Add water and salt to a clean large saucepan
  2. Boil
  3. Add potato to the potatoes
  4. Cook until soft and continue - 20 min
  5. Add breadcrumbs, dried oregano, garlic powder, lemon and parmesan cheese to a clean small bowl
  6. Mix together with tablespoon
  7. Transfer mixture to plate
  8. Add egg to a clean small bowl
  9. Beat
  10. Prepare a clean work surface with plastic wrap
  11. Place chicken breast on the work surface
  12. Cover with plastic wrap
  13. Flatten
  14. Dip chicken into egg mixture
  15. Coat crumbs
  16. Add olive oil to a clean frying pan
  17. Cook each side until golden brown - approx 3 min, medium-high heat
  18. Transfer content of frying pan to serving plate
  19. Keep warm
  20. Retrieve frying pan
  21. Heat - medium heat
  22. Add butter to the frying pan
  23. Mix in tomato and capers to the frying pan
  24. Add white wine to the chicken
  25. Season with salt & pepper
  26. Simmer and continue - approx 2 min
  27. Drain potatoes
  28. Return
  29. Add lemon juice and butter to the potatoes
  30. Season generously
  31. Mash with potato masher
  32. Transfer potatoes to serving plate
  33. Add arugula to the chicken
  34. Stir quickly
  35. Serve
  36. Yum!
