A comforting beef soup that is ready in just 20 minutes. Packed with beef, beans and corn, this soup is hearty enough to serve for dinner, but it would also make a nice lunch. Feel free to add more or less chili depending on your heat preference.

Step preview

  1. Prep and set aside red bell pepper: sliced
  2. Prep and set aside red onion: halved & finely sliced
  3. Prep and set aside fresh chili: finely sliced
  4. Heat a saucepan on medium-high heat
  5. Add vegetable oil
  6. Add prepared red bell pepper
  7. Add prepared red onion
  8. Cook for approx 5min until lightly browned
  9. Reduce on low heat
  10. Add prepared fresh chili
  11. Add ground cumin
  12. Add tomato paste
  13. Stir for approx 1min
  14. Get saucepan
  15. Add beef stock
  16. Add canned black beans
  17. Add canned corn
  18. Simmer for approx 5min until fragrant
  19. Heat a frying pan
  20. Add vegetable oil
  21. Sear steak each side
  22. Transfer beef to plate
  23. Let rest for approx 2min
  24. Slice and reserve liquid
  25. Transfer content of saucepan to 4 medium bowls
  26. Transfer content of plate to 4 medium bowls
  27. Add lime juice
  28. Garnish with cilantro
  29. Add tortilla chips
  30. Add cheddar cheese
  31. Serve immediately
