A comforting beef soup that is ready in just 20 minutes. Packed with beef, beans and corn, this soup is hearty enough to serve for dinner, but it would also make a nice lunch. Feel free to add more or less chili depending on your heat preference.

Step preview

  1. Prep and set aside red bell pepper: sliced
  2. Prep and set aside red onion: halved & finely sliced
  3. Prep and set aside fresh chili: finely sliced
  4. Heat a clean saucepan - medium-high heat
  5. Add vegetable oil
  6. Add prepared red bell pepper
  7. Add prepared red onion
  8. Cook until lightly browned - approx 5 min
  9. Reduce - low heat
  10. Add prepared fresh chili
  11. Add ground cumin
  12. Add tomato paste
  13. Stir - approx 1 min
  14. Add beef stock
  15. Add canned black beans
  16. Add canned corn
  17. Simmer until fragrant - approx 5 min
  18. Heat a clean frying pan
  19. Add vegetable oil
  20. Sear steak each side
  21. Transfer beef to plate
  22. Let rest - approx 2 min
  23. Slice and reserve liquid
  24. Transfer content of saucepan to 4 medium bowls
  25. Transfer content of plate to 4 medium bowls
  26. Add lime juice
  27. Garnish with cilantro
  28. Add tortilla chips
  29. Add cheddar cheese
  30. Serve immediately
