Tender cod with a Jamaican kick. Spicy jerk seasoning pairs perfectly with this sweet, fresh, juicy salsa. Or, use another spice mix of your choosing. If you have time, prepare the salsa the night before to give the flavours a chance to infuse and meld together.

  1. Prep and set aside garlic clove: crushed
  2. Prep and set aside tomato: deseeded & diced
  3. Prep and set aside fresh basil: chopped
  4. Prep and set aside black olives: pitted & chopped
  5. Prep and set aside fresh basil: chopped
  6. Get a clean medium bowl
  7. Add peeled, segmented, halved orange
  8. Add prepared garlic clove
  9. Add prepared tomato
  10. Add prepared fresh basil
  11. Add prepared black olives
  12. Add olive oil
  13. Add salt & pepper then set aside
  14. Get a clean plate
  15. Add cod fillet
  16. Brush with olive oil
  17. Coat seasoned salt
  18. Heat a frying pan on medium-high heat
  19. Transfer fish to frying pan skin side down
  20. Cook in frying pan for 5min
  21. Turn
  22. Cook in frying pan for 3min
  23. Let rest for approx 5min
  24. Garnish with prepared fresh basil
  25. Serve
