  1. Prep and set aside onion: peeled & diced
  2. Prep and set aside carrot: diced
  3. Prep and set aside garlic clove: peeled & minced
  4. Prep and set aside vegetable stock
  5. Prep and set aside red lentils: rinsed
  6. Get a clean stockpot
  7. Add olive oil
  8. Heat - medium-high heat
  9. Add prepared onion
  10. Add prepared carrot
  11. Sauté until softened while stirring occasionally - 5 min
  12. Add prepared garlic clove
  13. Sauté until fragrant while stirring occasionally - 1 min
  14. Add prepared vegetable stock
  15. Add prepared red lentils
  16. Add corn kernels
  17. Add ground cumin
  18. Add curry powder
  19. Add saffron
  20. Add cayenne pepper
  21. Stir until combined
  22. Cook until simmering and cover
  23. Cook until tender while stirring occasionally - 15 min
  24. Purée carefully with stick blender until smooth
  25. Mix in juice of, zest of lemon
  26. Season with salt & pepper to taste
  27. Serve immediately
  28. Garnish with dill
  29. Garnish with hemp seeds
  30. Garnish with chili flakes
