Step preview

  1. Add white flour to a clean large mixing bowl
  2. Prepare a clean small bowl
  3. Add fresh yeast and milk to the small bowl
  4. Blend until smooth
  5. Transfer
  6. Let rise - 20 min
  7. Add salt, sugar and egg to the large mixing bowl
  8. Blend until dough forms - 20 min, low speed
  9. Cut unsalted butter into the large mixing bowl into squares
  10. Add one by one until well blended
  11. Blend until dough forms - approx 30 min, dough hook
  12. Cover with kitchen towel - approx 1 hr, 30°C
  13. Flatten
  14. Cover with plastic wrap
  15. Let rise in fridge until doubled - approx 2 hr
  16. Flatten and fold in
  17. Roll out
  18. Prepare a clean loaf pan with parchment paper
  19. Cut into pieces and gently pat into pan
  20. Let rest with kitchen towel until doubled - approx 2 hr
  21. Pre-heat oven - 180°C
  22. Add egg to a clean small bowl
  23. Brush evenly
  24. Cook until golden brown and let cool - approx 40 min, 82°C, middle rack
