Basic recipe for a fluffy and mellow bread (brioche).

    Method

  • 1. Add white flour to a clean large mixing bowl
  • 2. In a clean small bowl mix together fresh yeast and milk
  • 3. Pour the liquid into a small well, cover with flour, and combine together
  • 4. Let rise - 20 min
  • 5. To the bowl with dough, add salt, sugar and egg
  • 6. Blend until dough forms - 20 min, low speed
  • 7. Add unsalted butter one by one until well blended
  • 8. Blend until dough forms - approx 30 min, dough hook
  • 9. Cover with kitchen towel and let rest for 1 hr
  • 10. Flatten and cover with plastic wrap
  • 11. Let rest on the fridge for at least 2 hours
  • 12. Spread on a thickness of 2 cm. Then do 3 "tour simple" (fold in 3)
  • 13. Prepare a clean loaf pan with parchment paper
  • 14. Cut in 8 parts and gently pat into pan
  • 15. Cover with kitchen towel and let rest with until doubled - approx 2 hr
  • 16. Pre-heat oven - 160°C / 320°F
  • 17. Brush top of the brioche with beaten egg
  • 18. Bake until golden brown and let cool - approx 40 min, middle rack
