Method
1. Add white flour to a clean large mixing bowl
2. In a clean small bowl mix together fresh yeast and milk
3. Pour the liquid into a small well, cover with flour, and combine together
4. Let rise - 20 min
5. To the bowl with dough, add salt, sugar and egg
6. Blend until dough forms - 20 min, low speed
7. Add unsalted butter one by one until well blended
8. Blend until dough forms - approx 30 min, dough hook
9. Cover with kitchen towel and let rest for 1 hr
10. Flatten and cover with plastic wrap
11. Let rest on the fridge for at least 2 hours
12. Spread on a thickness of 2 cm. Then do 3 "tour simple" (fold in 3)
13. Prepare a clean loaf pan with parchment paper
14. Cut in 8 parts and gently pat into pan
15. Cover with kitchen towel and let rest with until doubled - approx 2 hr
16. Pre-heat oven - 160°C / 320°F
17. Brush top of the brioche with beaten egg
18. Bake until golden brown and let cool - approx 40 min, middle rack
