These traditional Irish potato breads are a perfect complement to a hearty breakfast. Top with poached eggs and spinach. A great way to use leftover mashed potatoes.
Ingredients
Potato500 gpeeled, diced
Salt5 g
Salted butter60 g
All purpose flour175 g
Egg1
Black pepperas neededground
Method
1. Add potato and salt to a clean large saucepan
2. Cover with water
3. Heat until boiling
4. Simmer until tender - approx 10 min
5. Drain well
6. Mash with potato masher until smooth
7. Add salted butter, all purpose flour and egg to the dough
8. Season with black pepper
9. Stir together until completely mixed
10. Turn out on lightly-floured surface
11. Divide into halves
12. Roll out
13. Cut into quarters
14. Cook in frying pan until golden brown - medium heat
15. Serve immediately
