Method
1. Heat oil in a large skillet over high
2. Add chicken; cook, without stirring, until browned, about 3 minutes
3. Turn chicken; cook, stirring occasionally, until browned on all sides, 6 to 7 minutes
4. Add onion, bell peppers, jalapeño and garlic; cook, stirring often, until vegetables are softened, about 8 minutes
5. Add tomato and salt; reduce heat to medium, and cook until tomatoes release juices and vegetables and chicken are coated, 5 to 7 minutes
6. Remove from heat. Stir in basil, and serve over rice
