  18. Let rest dough for 1h until doubled
  19. Grease with olive oil with a jelly roll pan lightly
  20. Punch down dough
  21. Flatten dough onto jelly roll pan
  22. Cover with plastic wrap
  23. Let rest for 45min until doubled
  24. Press an indentation
  25. Drizzle with olive oil
  26. Sprinkle with sea salt
  27. Cover with plastic wrap
  28. Let rest for 45min until doubled
  29. Pre-heat
  30. Bake for 18min on low rack until light golden
