Ingredients
Dark chocolate220 g
Heavy cream360 g
Milk60 g
Cinnamon stick2
Cardamom pods2
Cloves1 teaspoon
Black peppercorns1 teaspoon
Ginger10 gpeeled

Method
1. Add dark chocolate to a clean medium glass bowl and set aside
2. Add heavy cream, milk, cinnamon stick, cardamom pods, cloves, black peppercorns, ginger, nutmeg and orange to a clean saucepan
3. Heat until just boiling
4. Leave - 30 min
5. Strain with sieve
6. Heat gently until just boiling
7. Pour cream into chocolate
8. Stir until smooth
9. Serve
