Step preview

  1. Add egg yolk to a clean medium bowl
  2. Add water to the medium bowl
  3. Whip until creamy
  4. Add sugar to the medium bowl bit by bit
  5. Whip until combined then set aside - 10 min
  6. Add dark chocolate to the medium bowl
  7. Whip slowly until combined
  8. Add whipped cream to a clean medium bowl
  9. Whip quickly until hard
  10. Transfer cream to medium bowl
  11. Add egg white to the medium bowl
  12. Whip quickly until creamy
  13. Transfer cream to medium bowl
  14. Mix until combined
  15. Let cool in freezer until hard - 1 hr
  16. Add raspberries to the medium bowl
