Skinny chicken noodle rainbow salad with chilli lime dip. A mandolin will make easy work of the finely sliced vegetables.

    Method

  • 1. Pre-heat a clean frying pan
  • 2. Add wholegrain mustard, brown sugar, olive oil, salt and black pepper to a clean small bowl
  • 3. Mix until combined
  • 4. Add chicken breast
  • 5. Toss until coated
  • 6. Transfer chicken to frying pan
  • 7. Cook each side - approx 4 min, medium heat
  • 8. Let rest and continue
  • 9. Add greek yogurt, mayonnaise, cilantro, lime, fresh chili, salt, black pepper, garlic clove and granulated sugar to a clean ramekin
  • 10. Whisk until combined
  • 11. Add red cabbage, carrot, radish, yellow bell pepper, red bell pepper, white cabbage, scallion and ramen noodles to a clean large serving bowl
  • 12. Toss until combined
  • 13. Divide salad between 3 medium bowls
  • 14. Add chicken slices to each bowl
  • 15. Drizzle with dressing
  • 16. Serve
