  2. Get a clean medium bowl
  3. Add small sweet potato
  4. Arrange sweet potatoes in baking sheet
  5. Drizzle with olive oil
  6. Bake for 25min
  7. Add unpeeled garlic clove
  8. Bake for 20min until soft
  9. Cut sweet potatoes into halves
  10. Get a clean large mixing bowl
  11. Scoop three quarters of sweet potatoes onto large mixing bowl
  12. Squeeze garlic into large mixing bowl
  13. Add ground cumin
  14. Add chipotle chili powder
  15. Add diced jalapeño pepper
  16. Add sea salt
  17. Mix
  18. Add drained, rinsed canned black beans
  19. Mix
  20. Transfer filling to baking sheet
  21. Add grated cheese
  22. Bake a small bowl for 12min until golden brown
  23. Top with sour cream
  24. Sprinkle with sliced green onion
  25. Garnish with cilantro
  26. Serve immediately
