Method
1. Pre-heat oven - 170°C / 340°F
2. Line 2 clean baking sheets with parchment paper
3. Add unsalted butter and granulated sugar to a clean large mixing bowl
4. Cream together until smooth
5. Add egg and mix
6. Add all purpose flour, baking powder and poppy seeds to a clean medium bowl and whisk until blended
7. Add dry ingredients to dough
8. Add lemon zest and juice
9. Mix until just combined
10. Scoop dough onto 2 baking sheets
11. Bake until golden brown - 12 min, 170°C / 340°F
12. Let cool until firm - 5 min
13. Transfer onto cooling rack
