Method
1. Prepare 2 clean round pans
2. Pre-heat the oven - 175°C
3. Add egg to a clean large mixing bowl and whisk until frothy
4. Add granulated sugar to the batter and whisk until thick
5. Add all purpose flour and cocoa powder to the batter and fold together until blended
6. Add dark chocolate to a clean medium glass bowl
7. Melt in microwave until smooth
8. Fold chocolate mixture into batter
9. Transfer batter to 2 round pans
10. Bake until skewer tests clean - 20 min, 175°C
11. Let cool - 5 min
12. Turn out onto cooling rack
13. Drizzle with kirsch
14. Add heavy cream to a clean large mixing bowl
15. Whisk until soft peaks form
16. Add mascarpone cheese, vanilla bean pod and dark chocolate to the cream
17. Mix until combined
18. Add canned morello cherries to a clean small bowl
19. Spread cream with 2 cake
20. Add fruit to 2 cake
21. Assemble
22. Add dark chocolate to a clean medium glass bowl
23. Add heavy cream to a clean saucepan
24. Heat
25. Pour cream into glaze and whisk glaze together until smooth
26. Spread glaze with 2 cake and garnish with cherries
