This basic white loaf has a lovely crisp crust. Bake in a rustic round, or divide dough into 2 loaf pans for square slices. Requires leavening for 8 hours or overnight.

Step preview

  1. Get a clean large mixing bowl
  2. Add bread flour
  3. Add active dried yeast
  4. Add warm water
  5. Mix well and cover
  6. Let rest - approx 8 hr

  12. Knead until elastic - 10 min, dough hook
  13. Grease a clean large mixing bowl
  14. Transfer dough to large mixing bowl
  15. Cover with plastic wrap
  16. Let rise until doubled - 1 hr 30 min
  17. Line a clean baking sheet with parchment paper
  18. Turn out large mixing bowl on lightly-floured surface
  19. Shape into a ball
  20. Transfer large mixing bowl to baking sheet
  21. Cover with plastic wrap until doubled - 1 hr
  22. Pre-heat - 210°C
  23. Cut
  24. Bake - 20 min, 210°C
  25. Reduce - 190°C
  26. Bake until hollow-sounding when tapped - 10 min, 190°C
  27. Let cool
