Method
1. Pre-heat oven - 171°C
2. Add dates and water to a clean saucepan
3. Simmer - 5 min
4. Add maple syrup and vanilla extract to a clean medium bowl
5. Transfer fruit to syrup
6. Blend until smooth
7. Add egg yolk, all purpose flour, baking powder, ginger and orange to a clean medium bowl
8. Add syrup to batter
9. Mix until well combined
10. Add egg white to a clean large mixing bowl
11. Whisk until stiff peaks form
12. Fold egg whites into batter
13. Grease 4 clean ramekins
14. Add maple syrup to the ramekins
15. Pour batter into 4 ramekins
16. Wrap tightly with foil
17. Place in water bath
18. Bake - 1 hr, 171°C
19. Turn out
20. Garnish with candied ginger
