These tuna patties are quick and easy to whip up and are loved by my whole family. If there are leftovers (which is rare), my 5 year old loves them in her lunchbox and I have taken them to work for lunch too.

  • Canned tuna icon
    Canned tuna850 gdrained
  • Baby spinach icon
    Baby spinach90 gfinely chopped

  • Wholegrain mustard icon
    Wholegrain mustard20 g
  • Coconut flour icon
    Coconut flour1 tablespoon
  • Onion granules icon
    Onion granules1 teaspoon
  • Garlic powder icon
    Garlic powder½ teaspoon
  • Ground turmeric icon

  • Coconut oil icon

    Method

  • 1. Add egg to a clean large mixing bowl
  • 2. Whisk lightly
  • 3. Add canned tuna, baby spinach, wholegrain mustard, coconut flour, onion granules, garlic powder, ground turmeric, paprika and salt & pepper to the patties
  • 4. Mix thoroughly until combined
  • 5. Form into rounds
  • 6. Chill in fridge until firm - approx 1 hr
  • 7. Line a clean plate with paper towels
  • 8. Heat a clean frying pan - medium heat
  • 9. Add coconut oil to the frying pan
  • 10. Fry patties until golden brown
  • 11. Transfer patties to plate
  • 12. Serve immediately
