A delicious lime pie

    Method

  • 1. Add granulated sugar, cornstarch and water to a clean saucepan
  • 2. Stir well until dissolved
  • 3. Cook slowly until firm and set aside
  • 4. Mix in egg yolk to the saucepan gradually
  • 5. Cook until smooth and mix - approx 2 min, medium heat
  • 6. Add lime juice and lime zest to the saucepan
  • 7. Add egg white to a clean medium bowl
  • 8. Beat until stiff peaks form
  • 9. Add granulated sugar to the medium bowl and continue mixing until glossy
  • 10. Add basic pie crust to a clean pie dish
  • 11. Cover with lime filling and merringue
  • 12. Bake until golden brown - approx 20 min, 180 °C / 355°F
