Method
1. Add granulated sugar, cornstarch and water to a clean saucepan
2. Stir well until dissolved
3. Cook slowly until firm and set aside
4. Mix in egg yolk to the saucepan gradually
5. Cook until smooth and mix - approx 2 min, medium heat
6. Add lime juice and lime zest to the saucepan
7. Add egg white to a clean medium bowl
8. Beat until stiff peaks form
9. Add granulated sugar to the medium bowl and continue mixing until glossy
10. Add basic pie crust to a clean pie dish
11. Cover with lime filling and merringue
12. Bake until golden brown - approx 20 min, 180 °C / 355°F
