Method
1. Pre-heat oven - 200 °C / 390°F
2. In a clean saucepan heat butter until melted over medium heat
3. Add spinach, cook until softened and turn off heat - 2 min
4. Let cool, chop then set aside
5. Add potato, hard goat cheese and spinach to a clean large mixing bowl and mix together until combined
6. Add panko breadcrumbs, paprika and vegetable oil to a clean medium bowl, mix then set aside
7. Add all purpose flour and salt & pepper to a clean small bowl, mix then set aside
8. Add egg to a third clean small bowl then set aside
9. Prepare a clean baking sheet with parchment paper
10. Assembly line! Roll into cylinders, dip in flour, then egg, then breadcrumbs
11. Space croquettes out on baking sheet and bake until golden
12. Garnish with fresh parsley
13. In a clean ramekin mix together sweet chili sauce and crème fraîche
14. Serve the croquettes warm with the dipping sauce on the side
