Method
1. Add unsalted butter, cream cheese and granulated sugar to a clean large mixing bowl
2. Cream until light and fluffy
3. Add egg, vanilla extract and lemon and mix briefly until combined
4. Add all purpose flour, baking powder and salt
5. Mix until dough forms
6. Wrap with plastic wrap
7. Chill in fridge - approx 1 hr
8. Pre-heat oven - 175°C
9. Line 2 clean baking sheets with parchment paper
10. Roll out dough until 1/4" thick and cut into different shapes
11. Transfer dough to 2 baking sheets
12. Bake until browned at edges - 8 min, 175°C
13. Cool on a wire rack
14. Add egg white to a clean large mixing bowl
15. Whisk until frothy
16. Add powdered sugar to the icing
17. Whisk until thick
18. Decorate cookies with piping bag
