  1. Pre-heat oven - 120°C
  2. Line 2 clean baking sheets with parchment paper
  3. Add egg white to a clean large mixing bowl
  4. Whisk until stiff peaks form
  5. Add superfine sugar to a clean medium bowl
  6. Mix sugar mixture into meringue bit by bit
  7. Add powdered sugar, ground cinnamon, ground cardamom and ground cloves to a clean medium bowl
  8. Mix sugar mixture into meringue bit by bit
  9. Scoop meringue onto 2 baking sheets
  10. Bake until hollow-sounding when tapped - 40 min, 120°C
