Method
1. Pre-heat oven - 174°C
2. Line 2 clean baking sheets with parchment paper
3. Add unsalted butter, powdered sugar and vanilla extract to a clean large mixing bowl
4. Beat until light and fluffy
5. Add all purpose flour to the large bowl gradually while mixing
6. Add pecan halves
7. Mix until well combined
8. Shape into balls
9. Place the balls on 2 baking sheets
10. Bake until lightly browned - 14 min, 174°C
11. Cool - 5 min
12. Add powdered sugar to a clean small bowl
13. Roll cookies in sugar mixture until covered
14. Transfer onto cooling rack
