Method
1. Pre-heat oven - 190°C
2. Add sweet potato to a clean baking sheet
3. Roast until soft - 50 min, 190°C, then set aside
4. Add olive oil to a clean large cast iron skillet
5. Heat over medium heat
6. Add spinach, nutmeg and salt & pepper
7. Cook until softened and continue
8. Whisk eggs in a clean large mixing bowl
9. Add feta cheese and cheddar cheese to the large cast iron skillet
10. Scoop sweet potatoes onto skillet
11. Transfer eggs to large cast iron skillet
12. Top with feta cheese and cheddar cheese
13. Bake until light golden - 15 min, 190°C
14. Serve immediately
